Meet Emily Boyd, an Imperfect customer, and professional soccer player. She’ll be sharing some of her favorite ways to incorporate Imperfect into her meals to keep her energized all day.
Emily: Hi there! I am so excited to share a few things about who I am, what I do, and why I love Imperfect.
First things first, my name is Emily Boyd, I am a professional soccer player on the Chicago Red Stars, a goalkeeper to be specific. I graduated from the University of California Berkeley and I’m a health food enthusiast. I have a food page on Instagram @eboydsfood and I love to share my fitness journey to help those who also have similar food and fitness goals (to be the healthiest human I can with my crazy lifestyle.) My life is really busy, but I still have quality food is still my top priority!
So you may be asking, how do you stay on track of your healthy eating? I stock my fridge every week with healthy produce from Imperfect, so instead of reaching for an unhealthy snack, I eat the yummy, ugly fruits and vegetables in my fridge! Seems like a bulletproof plan, right? Obviously, no one and no plan is perfect, but it sure helps not having to make that extra trip to the store each week. Also, who doesn’t love getting boxes filled with delicious, nutritious produce delivered to their front door?
One of my favorite things to do with my Imperfect sweet potatoes is to spiralize them. Then, I sauté them in avocado or olive oil and sprinkle them with salt and pepper. I top them with meat, eggs, or more veggies depending on my mood – so delicious!
My favorite Imperfect breakfast is banana eggs. I promise if you like banana bread you’ll like this! Whisk together 1 banana and 2 eggs, add 1 tsp chia seeds, 1 tsp vanilla, and 1 tsp cinnamon (optional). Add 1 tsp coconut oil to your pan and add egg mixture, cook until light and fluffy, but not brown. Top it with fruit and nuts!
Another one of my week-night favorites is stir fry. At the end of the week, when you have a bunch of veggies leftover, toss them into a wok or a sauté pan and bam – dinner! I like sautéing zucchini, onion, mushrooms, garlic, salt, and pepper until soft and topping it with some lean protein, like salmon.
